SOUP!!!

Here is the first batch of butternut squash- leak soup made this winter. This winter we will be playing around with butternut squash and different recipes for it... and especially different recipes for butternut squash soup! Please let us know if you have any recipes! This soup was pretty good! But we recommend gorgonzola cheese with it (and maybe some pine nuts)!

Old Fashioned.

No not the drink (though Epicurious Academic Glatt does recommend the ones from Circa) we mean the meal! A bit of meatloaf and mashed potatoes can always make you feel warm and happy! Check out the pictures from our Old Fashioned but always "hits the spot" meal of mashed potatoes, zucchini and meatloaf. Was perfect after a long day at school!

Peanut Butter Jelly Time Peanut Butter Jelly Time

Introducing Pimms...

Epicurious Academic Glatt's favorite drink is a Pimms Cup. Its a holdover from her year in the UK... and over this last weekend she introduced her favorite drink to Epicurious Academic Dew. It's always yummy no matter what time of year, spring fall or summer though it is definitely the best during a hot summer day and a BBQ!






























Epicurious Academic Glatts Pimms Cup Recipe (makes 4 glasses):

2 Small Cucumbers
1 large Orange
10 Strawberries
4 mint sprigs (or about 3 leaves to cup)
4 cups Fizzy Lemonade Soda (or diet 7 up can be subbed for a low calorie option!)
2 1/2 cups Pimms (Pimms No. 1 Cup.... can be found at Bevmo or online)
Ice

Combine all ingredients and stir! Make sure to have spoons/and or forks at hand so that you can pick out the Pimms soaked fruit!

A misbehaving potato...

Here at the Epicurios Academic household we like to try new things, new recipes and new cooking techniques. Sometimes these new recipes work out... sometimes they don't but the lesson for tonights dinner was definitely:

"Just because the recipe doesn't go to plan doesn't mean the end product can't be good!"


Though the original plan was for twice baked potatoes the end result was more like twice bake potatoes al gratin... no matter it was still super yummy!
















By the way check out our fridge of glory! Nothing beats a Hefeweizen and a slice of Lemon after a hard day of hitting the books.... (maybe except no homework or a football match between our favorite teams .... that would be Liverpool for Epicurios Academic Dew and Chelsea for Epicurios Academic Glatt):

Scrumdiddlyuptious!

Tonight was a feast fit for kinds:

1st.... Amazingly yummy pizza from Trader Joes with Pancetta and caramelized onions, both Epicurios Academics recommended it and it is relatively CHEAP.

































2nd, One of the Epicurios Academic made the most DELICIOUS homemade coffee cake ( all credit must go to Epicurious Academic Dew)....












































Here is the recipe... Epicurios Academic Dew searched and searched and decided that this was the best recipe.

Ingredients

  • 12 tablespoons unsalted butter at room temperature
  • 1 1/2 cups granulated sugar
  • 3 extra-large eggs at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/4 cups sour cream
  • 2 1/2 cups cake flour (not self-rising)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt

For the streusel:

  • 1/4 cup light brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon kosher salt
  • 3 tablespoons cold unsalted butter, cut into pieces

For the glaze:

  • 1/2 cup confectioners' sugar
  • 2 tablespoons real maple syrup

Directions

Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.

Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light. Add the eggs 1 at a time, then add the vanilla and sour cream. In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined. Finish stirring with a spatula to be sure the batter is completely mixed.

For the streusel, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.

Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.

Let cool on a wire rack for at least 30 minutes. Carefully transfer the cake, streusel side up, onto a serving plate. Whisk the confectioners' sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.
